Teriyaki chicken

INGREDIENTS

  • 1/2 cup soy sauce
  • 1/2 cup Chinese cooking wine
  • 1/2 cup mirin
  • 1/4 cup honey
  • 2tbs ginger, minced
  • 4 cloves garlic, minced
  • 3lb boneless chicken thighs, 1″ cubes
  • 2tbs olive oil
  • Sesame seeds
  • Green onions

INSTRUCTIONS

  1. Whisk together soy sauce, wine, mirin, and honey. Mince ginger and garlic and add to sauce.
  2. Cube chicken.
  3. In a large pan, heat oil on medium-high heat. Sear chicken for 1min/side. Cook in batches if needed.
  4. Return all the chicken to pan and add in sauce. Simmer for 4-5min. 
  5. Garnish with sesame and green onions.

Thoughts
Simple and fast to make. The teriyaki sauce is very thin, maybe add cornstarch to thicken. Also maybe marinate chicken in sauce for stronger flavor?
