Honey Wheat Bushman Bread

INGREDIENTS

  • 1.25 cups warm water
  • 1/4 cup honey
  • 2 tbs olive oil
  • 1 tbs molasses
  • 1 tbs cocoa powder
  • 1/2 tsp salt
  • 1.75 cup flour
  • 1 tbs dry active yeast
  • 1-1.5 cup flour 

INSTRUCTIONS

  1. Line baking sheet with parchment paper / Silpat mat.
  2. In large bowl, mix together water, honey, oil, molasses, cocoa powder, and salt.
  3. Mix in flour until well combined. Cover and let mixture sit for 20min.
  4. Add in yeast and more flour. Mix with dough hook for 3-5min. The dough will be very sticky. 
  5. Cover and let dough rise and double for 45-60min.
  6. Knead with lots of flour. Divide dough in half and shape into logs.
  7. Place logs on baking sheet, cover and let rise until doubled, 45-60min.
  8. Preheat oven to 350 deg F.
  9. Bake for 40min. Cool for at least 1 hr before slicing.

Thoughts
The dough is very sticky. I used copious amounts of flour while kneading to not have the dough stick to everything. I used all purpose flour instead of whole wheat flour and the bread came out just fine. It tastes just like the Outback Steakhouse bread with a sweet note and chewy texture.
