INGREDIENTS
- 1.25 cups warm water
- 1/4 cup honey
- 2 tbs olive oil
- 1 tbs molasses
- 1 tbs cocoa powder
- 1/2 tsp salt
- 1.75 cup flour
- 1 tbs dry active yeast
- 1-1.5 cup flour
INSTRUCTIONS
- Line baking sheet with parchment paper / Silpat mat.
- In large bowl, mix together water, honey, oil, molasses, cocoa powder, and salt.
- Mix in flour until well combined. Cover and let mixture sit for 20min.
- Add in yeast and more flour. Mix with dough hook for 3-5min. The dough will be very sticky.
- Cover and let dough rise and double for 45-60min.
- Knead with lots of flour. Divide dough in half and shape into logs.
- Place logs on baking sheet, cover and let rise until doubled, 45-60min.
- Preheat oven to 350 deg F.
- Bake for 40min. Cool for at least 1 hr before slicing.
Thoughts
The dough is very sticky. I used copious amounts of flour while kneading to not have the dough stick to everything. I used all purpose flour instead of whole wheat flour and the bread came out just fine. It tastes just like the Outback Steakhouse bread with a sweet note and chewy texture.
