Breakfast potatoes

INGREDIENTS

  • 2 lb (6 medium) Yukon potatoes
  • Olive oil
  • Salt and pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

INSTRUCTIONS

  1. Preheat oven to 400 deg F.
  2. Dice potatoes into 1/2″ cubes.
  3. In a large bowl, mix potatoes with olive oil and seasoning until well coated.
  4. Pour seasoned potatoes on a lined baking sheet.
  5. Bake for 20 min. Stir potatoes, then broil on high for 3-5min until golden brown.

Thoughts
Hit the spot when I was craving breakfast potatoes. These go well with some bell pepper and onion and a fried egg.
