Mixed Berry Cobbler

INGREDIENTS

  • 5 cups mixed berries
  • 1 tbs lemon juice
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 375 deg F. Grease pie pan.
  2. Mix berries and lemon juice in the pie pan. Cut any large berries smaller.
  3. Whisk together flour, baking powder, and salt.
  4. In medium bowl, cream together butter, brown sugar, and vanilla.
  5. Mix in dry ingredients until crumbling. Spoon dough over berries.
  6. Bake for 30min or until golden brown.

Thoughts
I used frozen berries without defrosting which worked just fine. I just chopped the larger strawberries to the same size as the other berries. I would increase the amount of fruit (from 3 to 5 cups, reflected above) and reduced the brown sugar and vanilla. My 8″ square dish was occupied so I used my pie pan which worked well. Any dish with 1-1.5 quart volume should work. The crumble on top is very buttery and delicious.
