INGREDIENTS
- 2 cups flour
- 1 tsp baking soda
- 1 tsp nutmeg
- 1/2 tsp salt
- 1 tbs brown sugar
- 1/2 cup butter, softened
- 2 tbs maple syrup
- 1 tbs ginger, minced (or 1.5 tsp ground)
- 1/2 cup molasses
- 1 tsp vanilla
- 2 eggs
- 1 cup buttermilk
INSTRUCTIONS
- Preheat oven 350 deg F
- In a medium bowl, whisk together flour, baking soda, nutmeg, and salt.
- In a large bowl, cream butter and brown sugar. Mix in maple syrup, molasses, vanilla, and eggs.
- Add flour and buttermilk to the molasses mixture. Mix until just combined.
- Pour mixture into greased loaf run. Bake for 45-50min.
Thoughts
For the recipe, I only used 1 tbs maple syrup and 1 tsp fresh minced ginger. Next time, I would double the maple syrup to 2 tbs and add 1 tbs ginger or use 1.5 tsp powdered ginger. The load was nice an airy but not as spicy as I expected.
