Gingerbread Loaf

INGREDIENTS

  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1 tbs brown sugar
  • 1/2 cup butter, softened
  • 2 tbs maple syrup
  • 1 tbs ginger, minced (or 1.5 tsp ground)
  • 1/2 cup molasses
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup buttermilk

INSTRUCTIONS

  1. Preheat oven 350 deg F
  2. In a medium bowl, whisk together flour, baking soda, nutmeg, and salt.
  3. In a large bowl, cream butter and brown sugar. Mix in maple syrup, molasses, vanilla, and eggs.
  4. Add flour and buttermilk to the molasses mixture. Mix until just combined.
  5. Pour mixture into greased loaf run. Bake for 45-50min.

Thoughts
For the recipe, I only used 1 tbs maple syrup and 1 tsp fresh minced ginger. Next time, I would double the maple syrup to 2 tbs and add 1 tbs ginger or use 1.5 tsp powdered ginger. The load was nice an airy but not as spicy as I expected.
