Zucchini bread

INGREDIENTS

  • 1.5 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1.5 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 cup chocolate chips
  • 2/3 cup walnuts, chopped
  • 1 egg
  • 1/4 cup brown sugar
  • 1/4 cup canola oil
  • 1 tbs maple syrup
  • 1.5 tsp vanilla extract
  • 1.5 cups zucchini, grated

INSTRUCTIONS

  1. Preheat oven to 350 deg F. Grease bread pan.
  2. Chop walnuts, and grate zucchini.
  3. In a medium bowl, mix together flour, salt, baking soda, baking powder, cinnamon, cloves, nutmeg, chocolate, and walnuts.
  4. In a large bowl, whisk together the egg, brown sugar, oil, maple syrup, and vanilla extract. Add the zucchini and dry ingredients. Mix until well combined.
  5. Pour into bread pan. Bake for 55-60min.

Thoughts
Zucchini makes the bread very moist while not adding the vegetable flavor. Next time, I might double the maple syrup (2 tbs), halve the walnuts (1/3 cup), and reduce the cinnamon (1/2-1 tsp). Instead of the 1/2 cup zucchini, I also read other recipes that used apple sauce.
