INGREDIENTS
- 1.5 cups flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1.5 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp nutmeg
- 1/4 cup chocolate chips
- 2/3 cup walnuts, chopped
- 1 egg
- 1/4 cup brown sugar
- 1/4 cup canola oil
- 1 tbs maple syrup
- 1.5 tsp vanilla extract
- 1.5 cups zucchini, grated
INSTRUCTIONS
- Preheat oven to 350 deg F. Grease bread pan.
- Chop walnuts, and grate zucchini.
- In a medium bowl, mix together flour, salt, baking soda, baking powder, cinnamon, cloves, nutmeg, chocolate, and walnuts.
- In a large bowl, whisk together the egg, brown sugar, oil, maple syrup, and vanilla extract. Add the zucchini and dry ingredients. Mix until well combined.
- Pour into bread pan. Bake for 55-60min.
Thoughts
Zucchini makes the bread very moist while not adding the vegetable flavor. Next time, I might double the maple syrup (2 tbs), halve the walnuts (1/3 cup), and reduce the cinnamon (1/2-1 tsp). Instead of the 1/2 cup zucchini, I also read other recipes that used apple sauce.
