Banana, coconut, chocolate chip pancakes

INGREDIENTS

  • 1.5 cups flour
  • 3.5 tsp baking powder
  • 1 tsp salt
  • 3 tbs butter, melted
  • 1 banana, mashed
  • 1.25 cups milk
  • 1 egg
  • 1/4 cup chocolate chips
  • 1/4 cup coconut chips

INSTRUCTIONS

  1. In a large bowl, whisk together flour, baking powder, and salt.
  2. Melt the butter and mash the banana.
  3. Create a well in the flour. Add butter, banana, milk, egg, chocolate chips, and coconut. Stir until just combined. Adjust levels of chocolate and coconut as desired.
  4. Heat a skillet to medium. Ladle ~1/4 cup of batter. Cook until browned on both sides ~3 minutes a side.

Thoughts
Perfect pancakes for the weekend. The coconut, banana, and chocolate give it a little more depth. These reheat very nicely as well.
