INGREDIENTS
- 1.5 cups flour
- 3.5 tsp baking powder
- 1 tsp salt
- 3 tbs butter, melted
- 1 banana, mashed
- 1.25 cups milk
- 1 egg
- 1/4 cup chocolate chips
- 1/4 cup coconut chips
INSTRUCTIONS
- In a large bowl, whisk together flour, baking powder, and salt.
- Melt the butter and mash the banana.
- Create a well in the flour. Add butter, banana, milk, egg, chocolate chips, and coconut. Stir until just combined. Adjust levels of chocolate and coconut as desired.
- Heat a skillet to medium. Ladle ~1/4 cup of batter. Cook until browned on both sides ~3 minutes a side.
Thoughts
Perfect pancakes for the weekend. The coconut, banana, and chocolate give it a little more depth. These reheat very nicely as well.
