INGREDIENTS
Pear filling
3 tbs butter, unsalted
4-5 Bartlett pears, chopped in 1/2″ pieces
1 tsp brown sugar
1/4 cup flour
1/2 tsp cinnamon
1/4 tsp salt
1/2 tsp vanilla extract
1/4 cup maple syrup
Crumble topping
1.5 cup flour
1/4 cup brown sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp cardamon
1/4 tsp ginger
1/4 tsp allspice
1/8 tsp nutmeg
pinch of salt
1/4 butter, unsalted
1 tbs maple syrup
1/4 cup soy milk
INSTRUCTIONS
Pear filling
1. Slice pears into 1/2″ pieces.
2. In skillet over the stove, melt butter.
3. Add in pears, brown sugar, flour, cinnamon, salt, vanilla extract, and maple syrup. Mix until pears are well covered.
4. Continue heating on the stove until sauce thickens, 3-5 min.
5. Pour into baking dish to cool.
6. Pre-heat oven to 350 deg F.
Crumble topping
7. In mixing bowl, combine flour, brown sugar, baking powder, cinnamon, cardamon, ginger, allspice, nutmeg, and salt.
8. Blend in butter until pea sized.
9. Add in maple syrup and half of the milk. Continue adding in milk until dough just starts coming together.
10. Pour over the pear filling, do not mix.
11. Bake in the oven 30-35min until the top is brown and the filling bubbling.
Thoughts
I cut the sugar in the original recipe by a lot and added in maple sugar. I also added an extra pear going from 4 to 5. The recipe suggested peeling the pears and that creates a smoother texture after baking but I like the skins in there and it’s less work. This recipe is delicious and definitely hits the spot when I want to make a pie but not the pie crust.
