Irish Brown Bread

INGREDIENTS
1 cup all purpose flour
3 cup bread flour
1 1/2 tsp baking soda
1 tsp salt

2 cups buttermilk
4 tbs unsalted butter, melted
2 tbs maple syrup

INSTRUCTIONS
1. Pre-heat oven to 400 deg F.
2. In large mixing bowl, combine all purpose flour, bread flour, baking soda, and salt. Use whisk to break up any clumps and combine.
3. Whisk buttermilk, melted butter, and maple syrup together.
4. Add buttermilk mixture to the dry ingredients. Mix until dough forms.
5. Knead dough for ~1min or until smooth.
6. Shape into a round disk, ~7″ diameter and 2″ thick. Score an ‘X’ onto.
7. Bake for 35-40min or until the crust sounds hollow when tapped.
8. Cool completely before slicing (~2hr).

Thoughts
This recipe is very loosely followed. I was looking for an easy bread to whip up and adjust to meet the ingredients I had on hand.

A very important note, Irish brown bread is a fairly dense bread. Which has a nice and chewier/doughier texture but not at all a light or fluffy bread. It’s delicious topped with some apple butter or jam.

I used a buttermilk substitute – 1 cup milk : 1 tbs vinegar/ lemon juice. I used 1 tbs apple cider vinegar and 1 tbs lemon juice for the recipe. I also let the bread cook for 40min to get a darker crust.
