Guacamole

INGREDIENTS
4 medium avocados / 2 large avocados (soft)
1 beefsteak tomato, diced
1/4 large yellow onion, diced
1 lime, quartered
salt and pepper to taste

Optional
2-3 cloves garlic, minced
jalapeno, minced

Lime coated chips

INSTRUCTIONS
1. Dice onion and tomato. Mince garlic and jalapeno.
2. Halve avocados and slice length and width wise to pre-dice. Scoop gridded halves into a medium bowl. Squeeze 1 quarter of the lime over the avocados to prevent browning.
3. Add onion, tomato, garlic, and jalapeno. Season with salt, pepper, and lime. Add extra vegetables or seasoning as desired.
4. Consume immediately or store tightly covered for 1 day.

Thoughts
Substitute fresh limes and garlic for bottled juice and powder if necessary. The perfect ratio of ingredients really comes from tasting and adjusting to personal preference. I’ve read about but haven’t tried adding sour cream/ creme fraiche to make the guac creamier. This is perfect on chips or in sandwiches or salads.
