INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 tsp baking powder
1 tsp salt
1 tsp brown sugar
1/2 cup chocolate chips
1 tbs cocoa powder
1 banana, mashed
1 1/4 cups soy milk
1 egg
3 tablespoons butter, melted
INSTRUCTIONS
1. In a large bowl, mix together flour, baking powder, salt, brown sugar, chocolate chips, and cocoa powder.
2. Create a well in the middle of the bowl and add the banana, soy milk, egg, and butter. Stir until well combined.
3. Cook on medium high heat until brown on both sides. Use ~1/4 cup for each pancake.
Thoughts
Excellent way to use up some bananas and milk. These are great the next day and an easy breakfast on the go. The batter is really thick so it’s important to slowly brown to ensure the center is cooked through.
