Couscous

INGREDIENTS

  • 1 small or 1/2 onion, diced
  • 1 bell pepper, diced
  • Olive oil / butter
  • 1 box couscous (~3 cup when cooked)
  • 2 Roma tomato, diced
  • 1/2 bag frozen kale / spinach
  • 1/2 can beans for protein

INSTRUCTIONS

  1. Chop onion and bell pepper into bite sized pieces.
  2. Heat pan to medium heat, add olive oil / butter, sauté onions and bell peppers until softened, ~10min.
  3. Prepare couscous following box instructions
  4. Dice Roma tomatoes, defrost frozen greens, drain and rinse beans.
  5. When onions and bell pepper are softened, stir in remaining vegetables and let evenly heat for ~2min.
  6. When couscous is prepared, stir in vegetables.
