Daikon, pork bone soup

INGREDIENTS

  • 6 cups water
  • 1.5-2lb pork spare ribs
  • 2 medium daikon, peeled and cubed
  • 3 carrots, chunked
  • 1/2 dried fish slice
  • 2 dried dates
  • 1″ ginger, peeled
  • salt to taste

INSTRUCTIONS

  1. Par-boil pork ribs. Prepare daikon and carrots.
  2. In a large pot, combine all ingredients. Bring to boil, then simmer for 2 hours. Salt to taste.
  3. Add additional water if necessary.

Thoughts
This makes a very clear and light soup. The ribs go very well with a little soy sauce and spicy sauce. It is very important to buy medium daikon as the larger pieces have a tough fiber on the outer layer. To par-boil meat, place ribs in a large pot and cover with water. Boil on high for 5min, drain and rinse pot if necessary.
